Pumpkin Soup!

yum! i made this soup several rounds already but always end up forgetting to take a snapshot. shoot!

A hearty dish that's absolutely yummy and quick to prepare too! (except when it comes to cubing the pumpkin - hint- get your hubby to do it! )


Recipe:
1kg pumpkin - cube into small pcs
1 leek
2 sticks of celery
2 carrots
2 onions
4 cloves of garlic
1L chicken stock

Saute the garlic, onions, carrots, leek and celery. When they turn brown, add in the pumpkin and saute some more. Add in the chicken stock and bring to a boil until the pumpkin is soft. Pour into blender then blend till smooth.

Add salt and pepper to taste. Serve with a swirl of cream on top - Voila!

This pumpkin soup is the best in the world. Trust me, no bias opinion here.... really.. err, I am only the co-chef (I helped chopped the pumpkin).
